- 1 pound large shrimp, peeled and deveined
- 2 tablespoons unsalted butter
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped red onion
- Salt and pepper to taste
- 4 New England-style hot dog buns
- 2 tablespoons chopped fresh chives (optional)
Instructions
- In a large pot, bring salted water to a boil. Add the shrimp and cook for 2-3 minutes until pink and opaque.
- Drain the shrimp and transfer them to a bowl of ice water to stop the cooking process. Once cooled, chop the shrimp into bite-sized pieces.
- In a separate bowl, mix together the mayonnaise, Dijon mustard, lemon juice, chopped celery, chopped red onion, salt, and pepper.
- Gently fold in the chopped shrimp into the mayonnaise mixture until well combined.
- Butter the outside of the hot dog buns and toast them in a skillet over medium heat until golden brown.
- Fill each toasted bun with the shrimp mixture, and sprinkle with chopped chives if desired.
- Serve immediately and enjoy your delicious shrimp rolls!
Notes
- Feel free to add diced avocado for a creamier texture.
- For a spicy kick, add a dash of hot sauce to the shrimp mixture.
- These shrimp rolls can be made ahead of time; just keep the filling refrigerated and assemble just before serving.
