Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, combine the granulated sugar, brown sugar, and vegetable oil. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Fold in the diced peaches and chopped pecans, if using.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
