- 2 cups all-purpose flour

- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup vegetable oil
- 3 large eggs
- 2 teaspoons vanilla extract
- 2 cups fresh peaches, peeled and diced
- 1/2 cup chopped pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, combine the granulated sugar, brown sugar, and vegetable oil. Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Fold in the diced peaches and chopped pecans, if using.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For a richer flavor, consider adding a pinch of cardamom or substituting half of the all-purpose flour with whole wheat flour.
- This bread can be stored in an airtight container at room temperature for up to 5 days.
- Serve warm with butter for an extra treat.
