- 1 lb red snapper fillets
- 1 lb large shrimp, peeled and deveined
- 1 cup grits
- 4 cups water
- 1 cup heavy cream
- 1/2 cup Cajun seasoning
- 1/4 cup butter
- 1/2 cup chopped green onions
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a pot, bring 4 cups of water to a boil. Add the grits and a pinch of salt, reducing heat to low and stirring frequently until thickened, about 20-25 minutes.
- Meanwhile, heat olive oil in a large skillet over medium heat. Add the garlic and sauté until fragrant, about 1 minute.
- Stir in the shrimp and half of the Cajun seasoning. Cook until the shrimp turn pink, about 3-4 minutes. Remove shrimp and set aside.
- In the same skillet, add the red snapper fillets, seasoning with remaining Cajun seasoning, salt, and pepper. Cook for about 4-5 minutes on each side until cooked through and flaky.
- Remove the snapper and keep warm. Add butter to the skillet, followed by the heavy cream. Stir to combine and bring to a simmer.
- Add the cooked shrimp back into the skillet, tossing to coat in the sauce. Cook for an additional 2 minutes.
- Serve the grits in bowls, topped with the Cajun cream shrimp and red snapper. Garnish with chopped green onions.
Notes
- For a spicier version, add more Cajun seasoning or a dash of hot sauce.
- Use chicken broth instead of water for the grits for added flavor.
- Garnish with fresh parsley or lemon wedges for a bright finish.
