- 1 cup orzo pasta

- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 2 cups chicken broth

- 2 tbsp olive oil
- Fresh parsley, chopped, for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add diced onion and bell pepper, sautéing until softened, about 5 minutes.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Add the ground turkey to the skillet, breaking it up with a spoon, and cook until browned, about 6-7 minutes.
- Season with Italian seasoning, salt, and pepper.
- Pour in the chicken broth and bring to a boil.
- Add the orzo pasta and cherry tomatoes, stirring well.
- Reduce heat to low, cover, and simmer for about 10-12 minutes, or until the orzo is tender and the liquid is absorbed.
- Remove from heat, garnish with fresh parsley, and serve warm.
Notes
- For extra flavor, add a splash of lemon juice before serving.
- You can substitute ground turkey with ground chicken or beef.
- Feel free to add other vegetables like spinach or zucchini.
