- 2 cups baby spinach
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced Polish sausage and cook until browned, about 5-7 minutes.
- Add chopped onion and bell peppers to the skillet, stirring frequently, and cook until the vegetables are tender, about 5 minutes.
- Stir in minced garlic, paprika, black pepper, and salt, cooking for an additional minute until fragrant.
- Add baby spinach to the skillet and cook until wilted, about 2-3 minutes.
- Remove from heat, garnish with fresh parsley, and serve hot.
Notes
- For a spicier version, add red pepper flakes to taste.
- Feel free to substitute the sausage with turkey or chicken sausage for a lighter option.
