- 2 cups all-purpose flour
- 1 cup rolled oats
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, melted
- 4 cups fresh peaches, peeled and sliced
- 1 teaspoon vanilla extract
- 1 cup cream cheese, softened
- 1 egg
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, combine the flour, oats, brown sugar, granulated sugar, baking powder, and salt.
- Add the melted butter to the dry ingredients and mix until crumbly.
- Press half of the mixture into the bottom of the prepared baking dish to form the crust.
- In another bowl, beat the cream cheese, egg, and vanilla until smooth. Spread this mixture over the crust in the baking dish.
- Layer the sliced peaches over the cream cheese mixture.
- Sprinkle the remaining crumb mixture over the peaches, followed by a dash of cinnamon.
- Bake in the preheated oven for 35-40 minutes or until golden brown and bubbly.
- Let cool for at least 15 minutes before slicing into bars and serving.
Notes
- For added flavor, consider adding a tablespoon of lemon juice to the peaches.
- These bars can be served warm with a scoop of vanilla ice cream for an extra treat.
- Store leftovers in an airtight container in the fridge for up to 3 days.
