  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, melted
  • 4 cups fresh peaches, peeled and sliced
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1 egg
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, combine the flour, oats, brown sugar, granulated sugar, baking powder, and salt.
  3. Add the melted butter to the dry ingredients and mix until crumbly.
  4. Press half of the mixture into the bottom of the prepared baking dish to form the crust.
  5. In another bowl, beat the cream cheese, egg, and vanilla until smooth. Spread this mixture over the crust in the baking dish.
  6. Layer the sliced peaches over the cream cheese mixture.
  7. Sprinkle the remaining crumb mixture over the peaches, followed by a dash of cinnamon.
  8. Bake in the preheated oven for 35-40 minutes or until golden brown and bubbly.
  9. Let cool for at least 15 minutes before slicing into bars and serving.

  • For added flavor, consider adding a tablespoon of lemon juice to the peaches.
