  • 2 cups fresh peaches, diced
  • 1/2 cup packed brown sugar
  • 1/4 cup milk
  • 2 cups powdered sugar
  • 1/2 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, and mix until just combined.
  6. Fold in the diced peaches gently to avoid breaking them.
  7. Divide the batter evenly between the prepared cake pans and smooth the tops.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  10. To make the frosting, combine the brown sugar, milk, and butter in a saucepan over medium heat. Stir until the mixture comes to a boil, then remove from heat and let cool slightly.
  11. Gradually whisk in the powdered sugar and vanilla extract until smooth and creamy.
  12. Once the cakes are completely cool, spread a layer of frosting on top of one cake layer, place the second layer on top, and frost the top and sides of the cake.
