- 1 pound kielbasa, sliced
- 4 medium potatoes, diced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the diced potatoes, sliced kielbasa, chopped bell peppers, chopped onion, and minced garlic.
- Drizzle the olive oil over the mixture and sprinkle the paprika, oregano, salt, and pepper. Toss everything together until well coated.
- Spread the mixture evenly on a large baking sheet.
- Bake in the preheated oven for 30-35 minutes, stirring halfway through, until the potatoes are golden brown and tender.
- Remove from the oven and let it cool slightly. Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add some red pepper flakes to the mix.
- Feel free to substitute other vegetables such as zucchini or carrots.
