Instructions

- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
- Using a spoon or your hands, form the potato mixture into small patties.
- Carefully place the patties in the hot oil, being careful not to overcrowd the pan.
- Fry the cakes for about 3-4 minutes on each side, or until golden brown and crisp.
- Transfer the cooked potato cakes to a paper towel-lined plate to drain excess oil.
- Serve warm as a side dish or a light main course.

- For added flavor, mix in some shredded cheese or herbs.
- These potato cakes can be frozen; just reheat them in the oven for a crisp texture.
