- 32 oz frozen tater tots
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 can black beans, rinsed and drained
- 1 jalapeño, sliced
- 1 cup diced tomatoes
- 1/2 cup sliced green onions
- 1/2 cup sour cream
- 1 avocado, diced
- Olive oil for cooking
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, heat a tablespoon of olive oil over medium heat. Add the ground beef or turkey and cook until browned, about 5-7 minutes.
- Drain excess fat and stir in the taco seasoning. Follow the package instructions for preparing the seasoning, typically adding water and simmering for a few minutes.
- While the meat is cooking, spread the frozen tater tots evenly in a large casserole dish.
- Bake the tater tots in the preheated oven for 20 minutes, until they start to become crispy.
- Remove the casserole dish from the oven and layer the seasoned meat over the tater tots.
- Sprinkle the black beans, diced tomatoes, jalapeño slices, and both types of cheese evenly over the top.
- Return the casserole to the oven and bake for an additional 15-20 minutes, until the cheese is melted and bubbly.
- Once baked, remove from the oven and top with sliced green onions, diced avocado, and a dollop of sour cream.
- Serve immediately and enjoy your loaded tater tot nachos!

- For a vegetarian option, substitute the meat with sautéed bell peppers and onions.
- You can add other toppings like olives, corn, or salsa based on your preference.
