- 1 cup unsalted butter, softened

- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder

- 1/2 cup chopped pistachios
- 1/2 cup dried cherries, chopped
- 1/4 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the mixture, beating until well combined.
- In a separate bowl, whisk together the flour, baking powder, salt, and cocoa powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chopped pistachios, dried cherries, and chocolate chips.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, until the edges are set but the centers are still soft.
- Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a more festive look, drizzle melted white chocolate over the cooled cookies.
- These cookies can be stored in an airtight container for up to one week.
- Feel free to substitute the dried cherries with cranberries or any dried fruit of your choice.
