- 1 pound ground turkey
- 2 medium zucchinis, diced
- 1 red bell pepper, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup diced tomatoes (canned or fresh)
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and garlic, and sauté for 2-3 minutes until they become translucent.
- Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the diced zucchinis and red bell pepper. Sauté for another 5 minutes until the vegetables start to soften.
- Add the diced tomatoes, Italian seasoning, salt, and black pepper. Stir well to combine.
- Reduce the heat to low, cover the skillet, and let it simmer for 10 minutes, allowing the flavors to meld.
- If using, sprinkle the grated Parmesan cheese on top just before serving.
- Serve hot and enjoy your meal!
