  • 2 medium zucchinis, diced
  • 1 red bell pepper, diced

  • 1 tablespoon olive oil
  • 1 cup diced tomatoes (canned or fresh)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and garlic, and sauté for 2-3 minutes until they become translucent.
  3. Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  4. Stir in the diced zucchinis and red bell pepper. Sauté for another 5 minutes until the vegetables start to soften.
  5. Add the diced tomatoes, Italian seasoning, salt, and black pepper. Stir well to combine.
  6. Reduce the heat to low, cover the skillet, and let it simmer for 10 minutes, allowing the flavors to meld.
  7. If using, sprinkle the grated Parmesan cheese on top just before serving.
  8. Serve hot and enjoy your meal!
