- 1 pound boneless, skinless chicken thighs, cut into 1-inch cubes
- 1/4 cup olive oil
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 red bell pepper, cut into chunks
- 1 zucchini, sliced
- 1 cup cherry tomatoes
- Fresh parsley, for garnish
Instructions
- In a large bowl, whisk together the olive oil, soy sauce, honey, garlic, ginger, salt, and pepper to create a marinade.
- Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
- Preheat the grill to medium-high heat.
- While the grill is heating, prepare the vegetables: thread the red bell pepper, zucchini, and cherry tomatoes onto skewers, alternating with the chicken pieces.
- Once the grill is hot, place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
- Garnish with fresh parsley and serve with a side of your favorite salad.
Notes
- For added flavor, try marinating the chicken overnight.
- Feel free to substitute any vegetables you have on hand.
- These skewers can also be cooked in the oven at 400°F for about 20 minutes if grilling isn’t an option.
