  • 1 pound boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 red bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • Fresh parsley, for garnish

Instructions

  1. In a large bowl, whisk together the olive oil, soy sauce, honey, garlic, ginger, salt, and pepper to create a marinade.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  3. Preheat the grill to medium-high heat.
  4. While the grill is heating, prepare the vegetables: thread the red bell pepper, zucchini, and cherry tomatoes onto skewers, alternating with the chicken pieces.
  5. Once the grill is hot, place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving.
  7. Garnish with fresh parsley and serve with a side of your favorite salad.
