  • 4 cups fresh peaches, sliced
  • 2 cups fresh raspberries
  • 1 cup granulated sugar, divided
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the sliced peaches, raspberries, 1/2 cup of sugar, lemon juice, and vanilla extract. Mix gently until combined. Pour the fruit mixture into a greased 9×13 inch baking dish.
  3. In another bowl, whisk together the flour, baking powder, salt, and remaining 1/2 cup of sugar.
  4. Add the milk and melted butter to the flour mixture. Stir until just combined; do not overmix.
  5. Drop spoonfuls of the batter over the fruit mixture, covering as much of the fruit as possible. It’s okay if some fruit is still visible.
  6. Bake in the preheated oven for 40-45 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Allow to cool for a few minutes before serving. Enjoy warm with ice cream or whipped cream!

Notes

  • For an extra touch, add a pinch of cinnamon to the batter.
