- 1 pound ground chicken
- 1 tablespoon taco seasoning
- 1 tablespoon olive oil
- 8 small flatbreads
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup sour cream
- 1/4 cup salsa
- Fresh cilantro for garnish (optional)
Instructions
- In a skillet, heat olive oil over medium heat.
- Add the ground chicken and taco seasoning, cooking until the chicken is browned and cooked through, about 5-7 minutes.
- While the chicken is cooking, preheat your oven to 350°F (175°C).
- Place flatbreads on a baking sheet and bake for 5 minutes to warm them up.
- Remove flatbreads from the oven and spoon the cooked chicken mixture evenly onto each flatbread.
- Top each flatbread with shredded lettuce, diced tomatoes, and shredded cheese.
- Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, then drizzle with sour cream and salsa.
- Garnish with fresh cilantro if desired, then cut into quarters and serve warm.
Notes
- For a spicier kick, add diced jalapeños to the toppings.
- Substitute ground turkey or beef for chicken for a different flavor.
- These can be made ahead of time and warmed in the oven before serving.
