  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil
  • 8 small flatbreads
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Add the ground chicken and taco seasoning, cooking until the chicken is browned and cooked through, about 5-7 minutes.
  3. While the chicken is cooking, preheat your oven to 350°F (175°C).
  4. Place flatbreads on a baking sheet and bake for 5 minutes to warm them up.
  5. Remove flatbreads from the oven and spoon the cooked chicken mixture evenly onto each flatbread.
  6. Top each flatbread with shredded lettuce, diced tomatoes, and shredded cheese.
  7. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven, then drizzle with sour cream and salsa.
  9. Garnish with fresh cilantro if desired, then cut into quarters and serve warm.
