Ingredients
Scale
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup cream cheese, softened
- 1 1/2 cups fresh peaches, peeled and diced
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and cream cheese until smooth.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the diced peaches gently to avoid mashing them.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For an extra flavor boost, try adding some chopped pecans or walnuts.
- This loaf can be stored in an airtight container for up to 3 days at room temperature.
- Feel free to substitute the peaches with other fruits like blueberries or strawberries for a different twist.
