Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the mashed bananas, eggs, and vanilla extract to the mixture, and mix until well combined.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the sour cream, and stir until just combined.
- If using, fold in the chopped walnuts.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

- For added flavor, consider using brown sugar instead of granulated sugar.
