Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped green onions
  • 1 egg
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup pineapple chunks (canned or fresh)
  • 1 cup teriyaki sauce
  • 1/2 cup bell pepper, diced
  • 1/4 cup soy sauce
  • 1 tablespoon brown sugar

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, green onions, egg, garlic powder, salt, and pepper. Mix until well blended.
  2. Form the mixture into meatballs, about 1 inch in diameter.
  3. Place meatballs in the bottom of the Crock Pot.
  4. In a separate bowl, mix together the teriyaki sauce, soy sauce, brown sugar, and diced bell pepper.
  5. Pour the sauce mixture over the meatballs in the Crock Pot.
  6. Add the pineapple chunks on top.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the meatballs are cooked through and tender.
  8. Serve meatballs warm, garnished with additional green onions if desired.

  • For a spicier kick, add a splash of sriracha to the sauce.
