- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup chopped green onions
- 1 egg
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup pineapple chunks (canned or fresh)
- 1 cup teriyaki sauce
- 1/2 cup bell pepper, diced
- 1/4 cup soy sauce
- 1 tablespoon brown sugar
Instructions
- In a large bowl, combine ground beef, breadcrumbs, green onions, egg, garlic powder, salt, and pepper. Mix until well blended.
- Form the mixture into meatballs, about 1 inch in diameter.
- Place meatballs in the bottom of the Crock Pot.
- In a separate bowl, mix together the teriyaki sauce, soy sauce, brown sugar, and diced bell pepper.
- Pour the sauce mixture over the meatballs in the Crock Pot.
- Add the pineapple chunks on top.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the meatballs are cooked through and tender.
- Serve meatballs warm, garnished with additional green onions if desired.
Notes
- For a spicier kick, add a splash of sriracha to the sauce.
- These meatballs can be served over rice for a complete meal.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
