- 1 lb pasta (penne, rotini, or fettuccine)
- salt for pasta water
- Sauce:
- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts (cubed)
- 6 slices bacon (cooked and crumbled)
- 1 onion (diced)
- 2 cloves garlic (minced)
- 1.5 cups chicken broth
- 1 cup heavy cream
- 1 packet (1 oz) ranch seasoning mix
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley (chopped)
Instructions
- Cook Pasta: Cook pasta according to package directions. Drain and set aside.
- Cook Chicken: In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Sauté Aromatics: Add diced onion to the skillet and cook until softened, about 3-5 minutes. Add minced garlic and cook for another minute until fragrant.
- Make Sauce: Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Stir in heavy cream and ranch seasoning mix. Bring to a gentle simmer and cook for 5 minutes, or until slightly thickened.
- Combine: Return cooked chicken to the skillet. Add cooked pasta, crumbled bacon, and Parmesan cheese. Toss to combine and coat everything evenly with the sauce. Stir in fresh parsley.
- Serve: Serve immediately, garnished with extra Parmesan and parsley if desired.
