- 12 oz penne pasta
- 1 lb Cajun sausage, sliced
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- 1 cup grated Parmesan cheese
- 2 green onions, chopped for garnish
Instructions
- Boil a large pot of salted water and cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced Cajun sausage and cook until browned, about 5-7 minutes.
- Add the diced onion, garlic, and red bell pepper to the skillet. Sauté until the vegetables are softened, about 4-5 minutes.
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Stir in the heavy cream and Cajun seasoning. Let the sauce simmer for about 5 minutes until it thickens slightly.
- Add the cooked pasta to the skillet and toss to combine, ensuring the pasta is well coated with the sauce.
- Stir in the grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions.
Notes
- For a spicier version, add more Cajun seasoning or a pinch of cayenne pepper.
- Feel free to substitute the sausage with chicken or shrimp for a different flavor.
- This dish can be made ahead of time and reheats well.
