Instructions
- In a large mixing bowl, combine the black beans, corn, red bell pepper, green bell pepper, cherry tomatoes, red onion, and avocado.
- Add the chopped cilantro to the bowl.
- In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper.
- Pour the dressing over the bean and vegetable mixture.
- Gently toss everything together until well combined.
- Let it sit for at least 15 minutes to allow the flavors to meld.
- Serve chilled or at room temperature with tortilla chips or as a side dish.
