- 1/4 cup cold water
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 3 large eggs
- 1/2 cup light corn syrup
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
- 1/4 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour, softened butter, sugar, and salt. Mix until crumbly.
- Add cold water gradually and mix until the dough forms. Shape into a ball, wrap in plastic, and refrigerate for 30 minutes.
- Roll out the dough on a floured surface to fit a 9-inch pie pan. Place the rolled dough in the pan and trim excess.
- In another bowl, whisk together brown sugar, granulated sugar, eggs, corn syrup, vanilla extract, and cinnamon until smooth.
- Stir in the chopped pecans.
- Pour the filling into the prepared pie crust.
- Bake for 45-50 minutes or until the filling is set and slightly puffed.
- Let cool for at least 2 hours before slicing and serving.
Notes
- For a richer flavor, add a splash of bourbon to the filling.
- Serve with whipped cream for an extra treat.
- This pie can be made a day ahead and stored in the refrigerator.
